Vassal Lane Scholars Make Amazing Discovery: Collard Greens Are Delicious!

The elective Know What You Eat teaches about the importance of knowing what you eat and how it affects you. Mr Grimm, the teacher of this elective, incorporates hands-on activities and other things such as learning, cooking and preparing food. It is a sixth grade elective with seven students. Several weeks ago, they learned about juicing.

Most recently, the class made Collard Green Wraps. The students reacted well to the collard greens, which may come as a surprise to many who are suspicious of green leafy things.

Here is the recipe:

Spread hummus onto a large collard green leaf. Top with sliced bell peppers, alfalfa sprouts, shredded carrots, and diced or thinly sliced cucumber. You can add more of whatever other vegetables you like, and then wrap it up!

Louie Pardo, a sixth grader in the elective said "It was interesting. It did not look appetizing but it was surprisingly really good”. His classmate Maryam Dar enthused that they were “great, healthy, and awesome!” Emma Weigele was also impressed, calling the Collard Green Wraps “delicious, healthy, fun and easy to make!”
